I love throwing together some of my favorite ingredients to make something simple that the entire family will love. Salads are versatile. They can be the star of the meal or in our case, they can be a side to one of your favorite dishes.

Around this time of year, because of all our kids sporting events, school schedule and with the holiday season around the corner I am on the search for some easy dinner ideas. We love pizza and every Friday seems to be all about sitting around the table eating pizza and then watching a movie. If the hubs and I leave on date night, pizza is something the kids can make all on their own.

Those of you who have been following A Dash of Sanity for some time now we have been going through some food eliminations with our 8-year-old Jersey. Due to some health issues, including constant pneumonia, we decided that we needed to take a further look into how the food she was eating was affecting her body. Ingredients
 

  • 1 recipe candied almonds
  • 6 ounces spinach
  • 4 ounces arugula
  • 1 cup pomengrante arils
  • 1 cup dried crandberries
  • 1-2 Honesycrisp apples
  • 15 ounce can pear halves
  • 1 recipe raspberry vinaigrette

Instructions
 

  • Thinly slice pears and set aside.
  • Prepare salad by adding spinach and arugula in a large bowl and toss to combine.
  • Quarter apples and then thinly slice. Top with pomegranate, cranberries, pears, candied almonds, and apple slices. Toss to combine and drizzle about 1/4 cup of vinaigrette, this will help the apples not to brown.
    If you are serving later leave off the apples and dressing and add those right before you serve.
    A great addition to the salad is the Daiya Mozzarella or Cheddar Cheeze.

  1. I’m sorry to have to say this but how can you say you are a family of foodies, yet promote Daiya cheese? There are so many other far superior vegan cheeses out there, and in my opinion ( and that of many of my friends) Daiya is the worst.

    On the positive side, this salad looks delicious!

    1. From what we could find, Daiya is the only frozen pizza option that is both dairy-free and gluten-free while still offering a cheese replacement. Sometimes the kids need an easy quick meal like frozen pizza on busy nights and this was perfect for Jersey! She loved that it still had cheese so she wasn’t left out. I agree there are lots of good cheese replacements out there if you’re looking to use it in a recipe of your own though!
