I love s’mores. Like really love. My favorite new s’more is made with Reese’s Peanut Butter Cups. Okay, I may have just drooled a little. My kids love them too, shocking I know right.

When I made some popsicles a few weeks ago, my son said we should make fudgesicles next, I quickly agreed as they are my to-go-to freezer snack. So I looked up a few recipes and in doing do I decided to make our own little spin, adding some layers of the summer inspired, campfire dessert. And it worked.

I couldn’t wait for these S’mores Fudgesicles to be done in the freezer, patience is a skill I am still developing. But when these suckers were done, there was no waiting for me to take a picture I bit into this fudgesicle pieces of heaven. Mine didn’t even have time to start to melt and well, either did any of my kids. They are so good.

So the next time it hits 90+ again and my kids are mentioning they want to make s’mores for dessert that night, I am making these S’mores Fudgesicles instead.

How do you make S’mores Fudgesicles

Add chocolate and milk to a medium saucepan and place over medium-high heat. Cook until chocolate melts, stir the entire time to ensure that it does not burn.

Whisk in sugar, cornstarch, cocoa, and salt until smooth. Continue to cook the chocolate mixture until it is thick, about 5-7 minutes. Remove from heat.

Stir in the vanilla and butter until completely combined and smooth.

Pour enough chocolate mixture to fill 1/4 of each Popsicle mold, saving enough for topping. Place in freezer for 5 minutes while you prepare the marshmallows and graham crackers. Do not put in Popsicle sticks yet.

Toast the marshmallows on one side by roasting them in the oven under low broil for 1-2 minutes, or use a Crème Brule.

In another bowl, combine 2 tbsp melted butter and sugar, and graham cracker crumbs until well combined.

Then using the end of a Popsicle stick, push the “toppings” into the fudgesicle layer. Then top with chocolate mixture until 3/4 full, place in freezer for 5 minutes, once again without the Popsicle sticks.

Remove the Popsicle molds from the freezer and add a few chopped chocolate chunks, 3-4 toasted marshmallows, and about 2 teaspoons of graham cracker “crust” on top.

Using the Popsicle stick, push the “toppings” into the fudge. Top off with a sprinkle of the graham cracker crust if desired.

Place the lid on the Popsicle molds and add sticks to fudgesicles. Place in freezer until frozen or ready to serve. This takes at least 4 hours. Remove from freezer and serve immediately. Enjoy!

  • 1/3 cup Ghirardelli’s Semi-Sweet chocolate chips
  • 2 cups milk
  • 2/3 cup sugar

  • 1 tablespoon butter
  • 1 cup mini marshmallows

  • 4 Ghirardelli Semi-Sweet chocolate squares chopped

Note: Make sure to push in the toppings to the fudgesicles, otherwise when you take the fudgesicle out ofthe mold, it will fall apart.

  1. I would recommend that you revise and edit this recipe quite a bit. I wasn’t sure when to use the chocolate chips and when to use the chocolate squares, you had corn starch on the recipe twice so I didn’t know how much to use and when, salt was in the recipe but NOT in the ingredients, butter was also on the ingredients twice so I didn’t know how much to use and when. It was very unclear on how to toast the marshmallows, a whole cup of graham crackers was WAY too much, and the recipe was extremely vague, so the fudgesicles turned out terribly, which is a true tragedy because of all the time and money we spent on the ingredients and to make these which we were super excited about, but our hopes are very let down. On top of all this, there were several typos and misspellings in the recipe. I apologize if this sounds rude, but I’m just being truthful, and I hope you will take all this into account and look over this recipe again. Thanks.
