I am completely in love with these Red Velvet Cake Mix Cookies. With a chewy center and a crunchy outer shell, these red velvet cookies literally combine all the elements of cookie perfection into red velvet goodness.

Not only are these red velvet cookies delicious they are oh, so easy! Made with just 4 ingredients, you can whip up these cookies in just a matter of minutes. You even have the choice to leave out the chocolate chips and make this just a 3-ingredient red velvet cookie but we love chocolate in our house and I love how it “dresses” up these cookies.

Depending on what kind of chocolate you prefer, you can really use any type of chocolate chips you desire. From white, semi-sweet, milk or dark, any of these chocolate chips will work with these red velvet cookies.

Growing up I made cake mix cookies all the time but it has been like 20-years since I last made them. And then when I wanted to make a simple treat recently, it was when I remembered this recipe. I was so excited to share this recipe with my kids and they are obsessed.

I love how cute and easy these Red Velvet Cake Mix Cookies are – no complicated recipe needed. They’re a sweet little treat on their own or even more fun made into sandwich cookies with cream cheese frosting.

what is a cake cookie + Recipe Tips

  • A cookie that is a baked or cooked food that is small, flat and sweet that the base of the cookie is made out of a cake mix.
  • How to store cake cookies? Store cake cookies in an airtight container at room temperature for 2–3 days (add a slice of bread to keep them soft), or refrigerate frosted cookies for up to 5 days.
  • Can you freeze cake cookies? Yes, this works really well. I stack them and place them in a freezer Ziplock bag. Make sure to seal shut with squeezing as much air out as possible. Freeze cookies in a freezer-safe container for up to 2–3 months.

how to make cake cookies

Make sure to preheat oven at 350 degrees F (175 degrees C).

Then in a large bowl mix together cake mix, eggs, and oil in a large bowl until well combined. Stir in chocolate chips, if you are adding those in. These are totally optional, but I sure do love them.

Scoop dough with cookie dough scoop (or by the tablespoon) and set on ungreased cookie sheets. It’s important that the cookie sheets are ungreased.

  1. These are really good and soooo easy to make! I am actually making them for thanksgiving along with the pies (yes I know – wrong color – but hey….. there are red leaves on the trees and red feathers on a turkey right??!!). My whole family sampled them as they came out of the oven and everyone gave them 5 stars!! Thank you for posting such a successful, delicious easy recipe for all of us whose busy lives work better with short cuts!! Happy Holidays đŸ™‚

  2. Thank you for this recipe!! Please can you tell me the quantity of the box, it says everywhere 1 box but I dont know how much that quantity is.

    1. We usually use Duncan Hines for this recipe, the mix is 15.25 oz or 432 grams. It looks like Betty Crocker is the same size, so you can use either one!

WOW! I made these on a whim today, only substitution was using room temp butter instead. It’s DELICIOUS! Thanks for a great base recipe – will make many more variations!
