Ingredients
1 1/2poundsboneless skinless chicken thighs
1medium onionhalved and thinly sliced
14.5ouncecan diced tomatoesdrained
2tablespoonstomato paste
1tablespoongrated fresh gingerabout 1-inch piece
2garlic clovesminced
1/2teaspoonground coriander
1/4teaspooncayenne pepper
coarse salt and ground pepper
1/2cupplain yogurt
1/4cupchopped fresh cilantro
1/2teaspoongaram masalaoptional
cooked ricefor serving
Instructions
In a 5-6 quart slow cooker, stir together chicken, onion, ginger, tomatoes, tomato paste, garlic, coriander, and cayenne; season with salt and pepper.
Cook on high for 4 hours or on low for 8 hours until fork-tender. Shred chicken (this is optional, but my kids like it this way), then add in yogurt, cilantro, and if using, garam masala.
