This Cream Cheese Veggie Dip is an easy-to-make recipe for any party or even great to serve on top of bagels for breakfast.

- 16 ounces fat-free cream cheese
- 2 large carrots grated
- 1 red bell pepper finely diced
- 1/2-3/4 cup fresh parsley chopped
With an electric mixer beat the cream cheese until smooth.
Mix in carrots, red bell pepper, and parsley into the cream cheese mixture until creamy.
Serve right away or refrigerate until ready to serve.
Serve with crackers and celery, I particularly like Nita Crisp (find these at your local Whole Foods Store) or even a pita chip is great too!
