White Chocolate Caramel Bars

These White Chocolate Caramel Bars are made with layers of buttery crust, ooey gooey caramel, and topped with white chocolate.

Ingredients

  • 3 tablespoons butter
  • 3 tablespoon cream
  • 32 caramels unwrapped
  • 3/4 cup + 2 tablespoons butter
  • 1 1/4 cup brown sugar
  • 1 1/4 cup rolled oats I like to use 1/3 rolled oats & 2/3 quick oats
  • 1 1/4 cup flour
  • 1 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 11 ounces white chocolate chips

Instructions

  • Preheat oven to 350 degrees. 
  • Melt butter, caramels, and cream in a double boiler over medium heat and set aside.
  • Cream butter and brown sugar together using a mixer. Set aside.
  • Stir together flour, oats, salt, and baking soda. Add to butter and sugar mixture and combine well.
  • Press 3/4 of the mixture into the bottom of a 9"x13" pan. Bake for 10 minutes. Remove from oven and cool for 10 minutes.
  • Pour caramel mixture evenly over crust, sprinkle with chocolate chips. Crumble remaining oatmeal mixture over caramel. Return to oven and bake an additional 15-17 minutes, until the edges are lightly browned. Remove from oven and cool completely before cutting.
