Ingredients
1 1/2cupsflour
1/4cupbrown sugar
1/2cupwhite granulated sugar
1 1/2teaspoonsbaking powder
1/2teaspoonsalt
1/8teaspoonnutmeg
3tablespoonsbuttermelted
1/2cupmilk
1/2teaspoonvanilla extract
1egg
3/4cupfresh blueberries
Cream Cheese Frosting
2tablespoonsunsalted buttersoftened
2ouncescream cheesesoftened
1cuppowdered sugar
1teaspoonlemon juice
1/2 - 1teaspoonmilk
1tablespoonlemon zest for garnishoptional (about 1 lemon)
Instructions
Preheat oven to 350 degrees. Grease 2 donut pans using cooking spray. Recipe makes 12 donuts.
Melt butter in a small bowl and set aside to cool.
In a medium mixing bowl add together flour, brown sugar, white sugar, baking powder, salt, and nutmeg. Set aside.
In a small mixing bowl whisk milk, vanilla extract, and egg until well combined.
Mix together the wet and dry ingredients until just combined, make sure you don’t over-mix, you want a fluffy donut not a dense one! Gently fold in blueberries.
Take a piping bag or a Ziplock bag with a corner cut off and add batter carefully. Pipe the dough evenly into the prepared pans, about 2/3 full.
Bake for 11-13 minutes, remove from oven and cool for 1 minute before you turn them over onto a cooling rack. Let the donuts cool on rack and make the frosting.
Cream Cheese Frosting
In a small bowl, beat together the butter and cream cheese with an electric mixer or hand beater. With the mixer on low speed, add the powdered sugar until smooth and creamy. Stir in lemon juice.
Once frosting is done and donuts are cool, dip the tops of the donuts into the frosting and turn over, back onto the cooling rack. Garnish with lemon zest if desired. Serve right away, enjoy!
Notes
Note: Frosting will not harden, it will stay soft. Do not stack them to store.
