Easy Skillet Lasagna

Ingredients

  • 4 ounces no boil lasagna noodles
  • 1 pound Italian sausage
  • 2 garlic cloves finely chopped
  • 14.5 ounces diced tomatoes
  • 32 ounces spaghetti sauce we love Rao's
  • 1 teaspoon Italian seasoning season to taste
  • 2 cups low-fat ricotta cheese
  • 2 eggs
  • 4 ounces cream of onion soup I used Campbell's
  • 1 1/2 ounces mozzarella cheese thinly sliced
  • 1 tablespoons freshly chopped basil

Instructions

  • In a large saucepan, brown the Italian sausage and garlic over medium-high heat until the meat is no longer pink, breaking it up while cooking.
  • Next, add the tomatoes and spaghetti sauce to the pan, and stir until combined. Heat all the way through until hot, then pour it into a large mixing bowl or measuring cup. Set aside.
  • In a small bowl, combine the soup, eggs, cottage cheese and Italian seasoning.
  • Return 1-1/2 cups meat sauce to the pan; spread evenly over the surface. Layer one cup of the ricotta mixture and spread over the sauce.
  • Top with 1 1/2 cups meat sauce, then place 1/2 of the noodles on top of the last layer of sauce, breaking to fit.
  • Repeat layers of ricotta cheese mixture, meat sauce and noodles. Top with remaining meat sauce. Bring to a boil. Then reduce heat to a simmer or low; cover and simmer for 15-17 minutes or until noodles are tender.
  • Remove from the heat. Sprinkle with shredded cheese; cover and let stand for 3-4 minutes or until cheese is melted. Top with freshly chopped basil or parsley.
