Peanut Butter Toffee Bark

Peanut Butter Toffee Bark is the most amazing peanut butter treat you could ever have. It’s crispy, buttery perfection ready in less than 30 minutes.

Ingredients

  • 40-50 saltine crackers (square soda crackers)
  • 1 cup butter
  • 1 cup light brown sugar
  • 2 cups semisweet chocolate chips
  • 1 1/3 cups creamy peanut butter

Instructions

  • Preheat the oven to 425° F.
  • Line a large sheet pan (mine is 11x16) with aluminum foil and then spray the foil covered pan with cooking spray. Arrange the soda crackers salt-side up in a single layer; set aside.
  • In a medium saucepan, add butter and brown sugar, and stir over medium heat. Let it come to a boil and simmer until it turns a caramel color. This only takes a few minutes. Immediately remove from the heat and slowly pour the caramel over the crackers. Make sure to evenly coat the crackers.
  • Place the pan in the oven and bake for 4-5 minutes, or until the caramel starts to bubble. This happens quickly so keep an eye on it!
  • While it is cooking, add chocolate chips and peanut butter to a microwave safe bowl and heat for 1 minute. Stir and heat again for 1 minute until mixture is melted and smooth. Set
  • Immeditately pour the chocolate/peanut butter mixture slowly and evenly over the caramel saltines. Carefully spread over the caramel without moving it around too much.
  • Transfer the pan to the freezer for 20 minutes or until the chocolate and caramel are set and firm. Break or cut into pieces as desired.
  • Store in an airtight container. We prefer to store them in the fridge, but they will be fine at room temp. Enjoy!
