Slow Cooker Chili Lime Pulled Pork is made with a chili rub, fresh cilantro, and cooked in lime juice. This is the easiest, juiciest pulled pork recipe.

Ingredients
1/4cupchili powder
1tablespooncoriander seedground
1 1/2teaspoonscumin
1tablespooncoarse kosher salt
2 1/2lbs.pork tenderloincut into 2 pieces
1/4cupfresh lime juice
2cupschicken broth
4clovesgarlicsliced
3/4cupcilantrochopped
Instructions
Prepare pork; mix chili powder, coriander seed, ground cumin, and salt in a large, shallow bowl. Roll the pork in the chili mixture, making sure to coat the entire pork loin.
Add the pork loin to a slow cooker. Pour in chicken broth and lime juice, add the sliced garlic and ½ cup chopped cilantro.
Cover and cook on low for 6-7 hours.
Once pork is done cooking, remove from the slow cooker and place onto a cutting board or serving plate. Shred pork by pulling apart using two forks. Add the pork back into the slow cooker and stir it in the juices, add the remaining ¼ cup cilantro and stir once again. Ready to serve or set the slow cooker on warm, until ready to serve.
Fantastic to serve over rice, with corn or flour tortillas or as a nacho!
