Roasted Potatoes

Roasted Potatoes are incredibly delicious. Seasoned with salt, pepper & rosemary, then cooked to perfection, making them the star of the meal.

Ingredients
  • 2 lbs small red potatoes
  • 1/4 cup Pure Blends Avocado Oil or Coconut Oil Plant-Based butter melted
  • 2 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 2 tablespoons minced garlic
  • 2 tablespoons fresh rosemary finely chopped
Instructions
  1. Preheat the oven to 400 degrees F.

    Cut the potatoes in quarters (or halves if very small) and place in a bowl with the melted spread, salt, pepper, garlic, and rosemary; toss until the potatoes are well coated. 

  2. Spread out the potatoes on a baking sheet in a single layer, 45 minutes to 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure each side is a nice golden brown.

  3. Remove the potatoes from the oven, season to taste, and serve.
