These delicious Best Ever Bran Muffins are a great source of fiber. They make for a perfect breakfast or can even be a healthy snack option.

Ingredients
  • 1 cup dry Bran buds {not flakes}
  • 1 cup boiling water
  • 8 tablespoon butter
  • 2 eggs
  • 2 cups sour milk {2 cups milk + 1/4 cup white vinegar}
  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 2 teaspoons salt
  • 2 1/2 teaspoons baking soda
  • 2 cups dry bran buds {not flakes}
Instructions
  1. Preheat oven to 375 degrees.
  2. Spray a regular sized muffin tin with cooking oil, set aside.
  3. Add the 1 cup of Bran buds to the one cup of boiling water and stir to combine.
  4. Add the remaining ingredients to a large mixing bowl, then add the soaked Bran buds.Mix until well combined.
  5. Scoop batter into prepared muffin tin and bake for 15 minutes.
