These Chewy Oatmeal Peanut Butter Butterscotch Cookies are deliciously soft and scrumptious. They will quickly become a cookie jar favorite.

Ingredients
  • 1/2 cup butter
  • 1 1/2 cups peanut butter
  • 1 1/2 cups packed brown sugar
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 tablespoon honey
  • 2 teaspoons baking soda
  • 4 1/2 cups rolled oats
  • 11.4 ounce bag butterscotch chips
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large mixing bowl bowl beat together butter and peanut butter until well combined. Add brown sugar, granulated sugar, and vanilla and beat until smooth.

  3. Beat in eggs.
  4. Add honey and baking soda and mix in. Stir in oats and butterscotch chips.
  5. Use a cookie dough scooper to put on un-greased cookie sheet. Bake for 12 minutes.
  6. Do not over bake.
  7. These cookies are flat and chewy - take them out at 12 minutes, cool on the pan for a few minutes then remove from pan and enjoy!
