This Bacon Fajita Quiche is easy to make yet loaded with flavor. This Quiche is stuffed to the brim with bell peppers, onions, bacon, and lots of cheese.

Ingredients
1pie crust sheet
1/2green bell pepperdiced
1/2red bell pepper diced
1/2small red oniondiced
1jalapeno stem & seeds removeddiced (optional)
salt & pepperto taste
1poundbaconcooked and chopped into bits
4large eggs
1cuphalf and half or whole milk
1cupcheeseI used Monterey Jack
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Roll out pie crust into pie pan.
In a medium mixing bowl combine onion, jalapeno, red & green peppers, cheese, and bacon and toss to combine. Add veggie and bacon mixture on top pie crust.
Mix the eggs and half and half in a bowl and pour egg mixture over toppings in the pie crust.
Bake in preheated oven for 15 minutes. Then reduce heat, leaving the pie in the oven to 350 degrees F (175 degrees C) and bake for an additional 35 minutes. When it is done the top of the quiche will begin to turn a nice golden brown.
Remove from oven and allow to sit 5-10 minutes before serving.
