Chopped Caprese Salad

Amazingly simple & insanely delicious this Chopped Caprese Salad is a great salad to feed a crowd over the holiday season.

Ingredients

  • 3 heads Romaine lettuce roughly chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup fresh roasted tomatoes found in the deli
  • 1/4 large purple onion diced
  • 1 cup fresh basil
  • 8 ounces Ciliegine mozzarella balls
  • 1 tablespoon Italian seasoning
  • olive oil
  • balsamic Glaze
  • croutons optional

Instructions

  • Drain mozzarella and place into a bowl. Sprinkle with 1 teaspoon of Italian seasoning and toss to coat. Set aside.
  • Roughly chopp Romaine lettuce and add to a salad bowl.
  • Top with seasoned mozzarella balls, onion, tomatoes and basil. Toss to combine and sprinkle with remaining Italian seasoning.
  • Serve and drizzle with olive oil and balsamic glaze. Top with croutons if desired, I prefer homemade.
