Eating the same dishes time and again can become a bit boring, so I’m always looking for ways to add some excitement. This is why I decided to create this new Tortellini Zuppa Toscana recipe. Although Olive Garden’s Soup is my favorite, we go there mainly for it {and the breadsticks}.

When friends or sisters come over for lunch, nothing beats grabbing a bowl of hot soup whilst catching up with them! Bringing along our kids does not make it as enjoyable, though; therefore now I prepare my own version at home!

While making your favorite dishes at home can challenge you when it comes to portion control, this altered version of my beloved soup is an exception. I adore the tortellini pasta here – any type would work! In our family, we are all about cheese-filled ones, though.

The cheesy pasta is the perfect complement to this luscious creamy broth. Preparing it requires minimal effort; all you need are chicken broth, heavy cream, and potatoes for a comforting soup base that can be simmered in a pot within minutes. The only setback? You must wait patiently until it’s ready!

When I first made this soup when my kids were little, they thought I was trying to kill them with spinach. They would cry and whine and pick around it. Now, as they have gotten older, I don’t get the complaints and only have one kid, Madden my picky eater who just eats around it. I am thankful the days of screaming and crying at the dinner table are over {or at least with the soup recipe, that is.}

It is fun to see how each person will eat this soup. We have those who eat all the pasta first, then drink the broth, and those who do the opposite. I eat it all together, but I think I am the only one.

Now, this Tortellini Zuppa Toscana is one of our cold-weather favorites. My sister, Nicole, happened to stop by the first time I made this soup (a few years ago), and she couldn’t help but grab a bite while it was simmering on the stove. She loved it and has made her twist on it, leaving out the bacon; she hates bacon. Weird, I know, but she is my sister, so I still love her.

Ingredients for tortellini soup

  • Cooked bacon diced
  • Spicy Italian sausage
  • Olive oil
  • Garlic
  • Yellow Onion
  • chicken broth
  • Russet potatoes peeled and diced
  • Spinach
  • Heavy cream
  • 9-ounce package of three-cheese tortellini

How do you make tortellini soup?

Heat a large skillet over medium-high heat. Add bacon and cook until crispy. Transfer to a paper towel-lined plate; set aside.

Add the sweet Italian sausage to the same skillet and cook until browned; crumble it as it cooks. Drain and set aside.

In a large pot, heat olive oil over medium heat. Add garlic and onion.

Cook until onions are translucent, which takes only a couple of minutes. Add chicken broth, stir together and bring to a boil.

Once it is brought to a boil, add potatoes and cook until tender, about 8-10 minutes. Meanwhile, cook tortellini as directed on the packaging.

Add in the cooked sausage and spinach until spinach begins to wilt, 2-3 minutes. Gently stir in heavy cream until heated through, 3-4 minutes.

At this point, season with salt and pepper, to taste.

Once the soup is hot, add in cooked tortellini, remove from heat, garnish with crumbled bacon, and serve.

  • 4 slices cooked bacon diced
  • 1 lb. spicy Italian sausage
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1 small yellow onion diced
  • 4 cups chicken broth
  • 2 medium russet potatoes peeled and diced
  • 2 cups baby spinach
  • 2 cups Half-n-Half
  • 9 ounce package three-cheese tortellini

Instructions
 

  • Heat a large skillet over medium-high heat add bacon and cook until crispy. I like to chop up my bacon before I cook it, makes the cooking time quicker and all of the bacon seems more evenly cooked. Transfer to a paper towel-lined plate; set aside.
  • To the same skillet add the sweet Italian sausage and cook until browned, be sure to crumble it as it cooks. Drain and set aside.
  • In a large pot heat olive oil over medium heat. Add garlic and onion. Cook until onions are translucent, takes only a couple of minutes. Add chicken broth, stir together and bring to a boil.
