Growing up, my mom always made a version of this Slow Cooker Chili Cheese Dip. It may have been the primary reason I looked forward to football season. We pretty much live on queso or dips all throughout football and basketball season. Tradition on Sunday is football and chips + dip.

While my kids could eat this Slow Cooker Chili Cheese Dip every single Sunday, I like making a variety. So on occasion, I will switch it up for my Slow Cooker Green Chile Queso which like this recipe is nice because they are both made in the slow cooker. We also love my Sausage Queso Dip too! Always a huge hit.

She made this Slow Cooker Chili Cheese Dip only for the game-day get-togethers, and I have the fondest memories of all our family friends celebrating or lamenting Sunday or Monday nights, clinging to the couch arm or a chip for a win.

I remember our first football championship as adults when our kids were old enough to sit down and cheer on our team. It was so fun – we made it magical by having this SLOW COOKER CHILI CHEESE DIP and molten lava cakes. The kids still remember this night too (more for the food than the football) and request these two items every year – even when our team doesn’t make it to the championship. In fact, they have come to ask for this dip every weekend during the season.

I provide all the essentials, including cups, napkins, silverware, drinks, and of course this SLOW COOKER CHILI CHEESE DIP. Then I ask for everyone to bring one of their favorite appetizers. Of course, my kids love chips and salsa, popcorn with M&MS and a few other requested items. And although I love having a veggie tray just to give myself a healthier option, you’ll most likely find me around the chips and dips.

Making a game-day plan and having a get together shouldn’t cost more than a ticket to actually go to a game. Am I right? It should be fun, stress-free {lol} and inexpensive. Family Dollar makes this doable.

Slow Cooker Chili Cheese Dip

SLOW COOKER CHILI CHEESE DIP – cheesy and full of flavor, this easy recipe will score a win on game day and be a hit during the holidays.

Ingredients
 

  • 1 1/2 lbs. cooked hamburger
  • 1/2 large white onion diced
  • 1 can dark red kidney beans drained and rinsed
  • 14 ounce can black beans drained and rinsed
  • 10 ounce bag frozen corn
  • 4 ounce can chopped green chiles optional
  • 20 ounce can diced fire-roasted tomatoes
  • 1 - 8 ounce can tomato sauce
  • 1 tablespoon taco seasoning
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 16 ounces Velveeta cut into cubes
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped cilantro optional

Instructions
 

  • Saute ground beef with chopped onions until cooked through. If you desire, drain excess grease from the pan.
  • Set slow cooker on high heat and add tomatoes and tomato sauce. Top with black beans, kidney beans, green chiles, and corn.
  • Next, add in all of the seasonings: cumin, chili powder and taco seasoning. Stir everything in the slow cooker until combined.
  • Add beef on top (do not mix in), Velveeta, and then the milk. Place the lid on the slow cooker and cook on high 2 hours.
  • Remove lid and stir to combine. Add in shredded cheddar cheese and cilantro, stir to combine. Replace lid back on and cook for another hour.
  • Remove lid, stir to combine and serve. Keep slow cooker on warm, while you are serving.
  • If it sits for too long, you may need to add an extra 1/4 cup milk to thin the cheese dip.
  • Great as a dip with taco chips, tortillas, crackers or even make as a topping to a burrito or taco salad!

  1. The ingredient list says to get a white onion, but in the directions there is no mention of when to add the onion.

        1. Sorry that seems to have been left out! I edited the recipe to include cooking the onions. You can definitely cook it with the beef to add more flavor, but if you’re in a pinch you can add it with the beans and chilis. Thank you for pointing that out! Enjoy the cheese dip!

  2. This is delicious! I had it at my friend’s house for a get together and requested the recipe. I was just wondering if and how this can be made the night before I am planning on serving it.

    1. You can make it ahead of time, it will keep in the fridge overnight! Just reheat it before you serve or start it at step 5 the next day an hour before serving.

    I added a half stick of cream cheese and doubled the taco seasoning and added some more cumin and chili seasoning. Turned out great!
