Slow Cooker Chicken and Sausage Gumbo is an easy twist on the classic dish. Made with green pepper, onion, celery, chicken stock, chicken, & smoked sausage.
We love gumbo. CORRECTION…my husband and I love gumbo. The kids not so much. I thought this Slow Cooker Chicken and Sausage Gumbo would be a perfect match for both my husband and me and our kids. Well, it wasn’t. It still had celery and tomatoes, two vegetables that are licensed to make my 3 younger children cry! In fact, I can hear them crying now as I write this.
I wasn’t much of a gumbo fan until I made my Slow Cooker Sausage and Shrimp Gumbo. It is so delicious and even easier to make!
I love, easy recipes and who doesn’t? Make it an easy slow cooker recipe, even better. Not only do I love how convenient slow cooker cooking is. I love, love the way it makes my house smell. The aroma is really perfect for any day, rain or shine, wind or snow, it is nice to walk into your house when it is filled with the smell of a good meal. It brings comfort.
While I do love a good shrimp gumbo, I made this because I was craving rice, and gumbo is just perfect to top it with. While I didn’t have any shrimp, I just adapted my recipe with chicken, some more tomatoes, broth and celery, and voila, this delicious Slow Cooker Chicken and Sausage Gumbo was made. Well, delicious if you ask me and Jake, well and Aiden and Jojo too. Madden, Jersey, and Cannon would rather starve than eat anything that has touched cooked celery. While the kids cry over this now, I know in a few years this is something we will all enjoy.
Until then, my husband and I get to enjoy leftovers and we don’t mind that one bit.

How do you make Slow Cooker Chicken and Sausage Gumbo?

Combine tomatoes with juice and broth in slow cooker.

Add sausage, chicken, onion, bell pepper, celery, oregano, thyme, and red pepper. Stir well. Cover; cook on low for 4-6 hours.

Serve gumbo over rice.

Slow Cooker Chicken and Sausage Gumbo
Ingredients
- 29 ounce diced tomatoes
- 14.5 ounces chicken broth
- 1 pound smoked sausage cut into ½ pieces
- 1 pound boneless-skinless chicken thighs or breast
- 1 medium onion diced
- 1 green bell pepper diced
- 3 celery ribs chopped
- 1 tablespoon oregano
- 1 tablespoon dried thyme
- ⅛ teaspoon ground red pepper optional
- red pepper flakes optional
Instructions
- Combine tomatoes with juice and broth in slow cooker.
- Add sausage, chicken, onion, bell pepper, celery, oregano, thyme, and red pepper. Stir well. Cover; cook on low for 4-6 hours.
- Serve gumbo over rice.
Nutrition
Want to add some heat to this Slow Cooker Chicken and Sausage Gumbo recipe? Add some red pepper flakes or ground red pepper, it will turn up the heat.
My husband loves heat, so he would love this prepared with chicken that was seared with cayenne pepper, something we will be trying in the near future, since our kids don’t care for it much anyway. I will just need a glass of milk near by!

My husband is a Louisiana boy, and he’s a huge fan of gumbo. However, we’ve never made it in a slow cooker before, and my interest is absolutely piqued because I feel like this could be a great way to have a smaller batch. (You know, since the pot we use for gumbo fills to serve at least 50…)
