Every Saturday morning, I ask my kids, “What do you want for dinner on Sunday?” It’s really the only meal they get a say in, as the rest of the week I adjust our menu to sports, dance, clubs and whatever else there is. Their answer without fail is cheese dip. They love queso! And I love any type of meal that takes minutes to prepare.

This spring – at least Thursdays through Sundays – my husband and kids have curled up on our bed with one game on the 50 inch and another on the iPad, cheering on their favorite teams and longing for the upsets.

My six-year-old daughter, Jersey, loves basketball more than any child I know. She’s already picked her team (because it shared the same name as her parks and rec team) and has watched them closely – even in bed at 9:05 pm. Sadly, they were just defeated, leaving much disappointment in her sweet little face.

How do you make Queso Verde Dip?

To make the queso, add the shredded white cheddar cheese, shredded Fontina cheese, milk, and Salsa Verde into a large microwave-safe bowl.

Place back in the microwave covered, and heat for 4 to 5 minutes, stirring every minute until cheese is completely melted and smooth. Serve immediately.

To make enchiladas, prepare tamales per package directions, heating in microwave for 3 minutes. Remove husk from tamale, place on an oven-safe plate, and pour 1/2 cup of the queso verde on top. Place plate in oven on low broil, and heat until cheese is hot and bubbly, 5-6 minutes.

To make taquitos as a dipper, prepare per package directions. Preheat oven to 400 degrees and bake taquitos for 11 minutes. I went a couple minutes longer for a crispier shell. So good!

  • 1 lb. white cheddar cheese shredded
  • 1/2 cup milk
  • 1 cup Salsa Verde recipe below
  • 1/4 cup diced green chiles
  • 4 ounce Fontina cheese shredded
  • 8 ounces cream cheese

Dippers/Toppings/Sides

  • Delixmex Chicken & Cheese Taquitos use as a dipper
  • Delimex Beef Tamales serve enchilada style
  • corn chips
  • fresh cilantro chopped
  • jalapenos thinly sliced
  • tomatoes diced

Instructions
