I have always been a huge peanut butter fan. It is my to-go-to for snack, breakfast, lunch and even dinner. Just ask my kids, there is at least one day a week where we are running behind and we have my favorite peanut butter and jelly toast with bananas. This is a Gillan family tradition and one that I plan to carry down for the generations.
So add peanut butter with chocolate and I am in food paradise.

Therefore it is just natural that Reese’s Peanut Butter Cups are one of my favorite candy bars. My son, Aiden loves them as well. But he likes the normal Reese’s Peanut Butter Cup and I like Reese’s Eggs. He likes more a thicker layer of chocolate and I like more peanut butter. But one thing we agree on is Reese’s is the best!

So when I heard that yesterday was Reese’s Peanut Butter Cup Day, I had to celebrate with something for me and my son, Aiden. That is when I came up with these Peanut Butter Cookie Dough Bites. I was so excited to show him, and although he was happy I made them he was WAY more excited about his new drone. Yes, a drone. He recently took an after school drone class where he learned to build, fly and maintain his own drone. He loved it. With a second mini-drone on its way from Amazon, this 12-year old was in heaven.

How do you make Peanut Butter Cookie Dough Bites with Reese’s Peanut Butter Cups?

In a medium-sized bowl, sift together brown sugar, sugar, flour, and cornstarch. Beat in peanut butter and vanilla extract until it starts to come together, the dough will resemble coarse crumbs.

Adding one tablespoon at a time pour in milk, add another tablespoon until you get the right consistency, I used 4 tablespoons.

Stir in chopped Mini Reese’s Peanut Butter Cups, until combined.

Scoop a heaping tablespoon, I actually use a cookie dough scooper, makes the job easy! Pack in the dough, then remove from the scooper or tablespoon and place into the sugar and roll it around until coated set on plate or pan.

Once all of the dough is rolled into the bites, about 16, place the plate/pan in the refrigerator for the bites to chill, approximately 10 minutes.

Now they are ready to enjoy!

To store the Peanut Butter Cookie Dough Bites place in an airtight container in the refrigerator for up to 5 days.

  • 1 cup flour
  • 2 teaspoons cornstarch
  • 1/2 cup peanut butter
  • 6 tablespoons cup brown sugar
  • 6 tablespoons granulated sugar
  • 2 teaspoons vanilla extract
  • 4-5 tablespoons milk
  • 3/4 cup Mini Reese’s Peanut Butter cups chopped
  • 1/4 cup granulated sugar for dusting, optional
