Okay folks, here’s the deal. I. LOVE. THESE. SANDWICHES. And I can’t believe I do. Honestly, I thought my husband would like these more than me. I only recently began to love French Onion Soup, so the thought of it with meatballs made me a little weary.

Most of you know I’m not a meatball fan. I think I had one too many Porcupine Meatballs when I was little, and they burned me out to any type of meatball. But this recipe changed all of that.

My favorite thing about this sandwich ended up being the meatball! I am still surprised. The after taste of this sandwich is exactly that of French Onion Soup. The cheese and onions are a perfect addition. In fact, the more onions the better for me. For my husband, the more cheese the better.

When I picked up this Sweet Onion Campbell’s Soups for Easy Cooking at Walmart in the soup aisle, I thought I would make something else out of it. But then I tried it and was stumped. That’s when my sister, Nicole, told me about this French Onion Chicken Sandwich she made. And it hit me, I’ll make meatballs, bake them in this soup, and voila – a match made in heaven.

How do you make French Onion Meatball Sandwiches?

In a medium mixing bowl add in hamburger, bread crumbs and whisked egg. Season with salt and pepper to taste. Mix together using your hands until it is all well combined and you can no longer see any egg.

Preheat oven to 350 degrees.

Using a cookie dough scooper, scoop hamburger mixture, remove from the scooper and roll into a smooth ball. I do this so that I am sure to get 18 meatballs and that they are even, makes for easier cooking.

Place the meatballs an inch apart in a two-quart baking dish, then pour oven the carton of Sweet Onion soup. It is a little thick, so use a spoon to pour it evenly over the meatballs.

Place in oven and bake for 25 minutes at 350 degrees.

In a medium sauté pan, heat 2 tablespoons of butter and onion slices. Cook over medium-high heat until onions start to caramelize, about 7-10 minutes. Stir frequently to make sure not to burn.

Once onions are cooked remove from heat and set aside.

Slice Ciabatta rolls in half, spread the remaining butter on each side of the rolls. Place butter side up on a cookie sheet.

Once meatballs are cooked, remove from oven and set aside. Turn oven to low broil and set the rolls in the oven for 3-5 minutes, until the butter melts and bread turns a golden brown.

Remove rolls from oven but leave the oven on low broil.

Place 3 meatballs on the bottom part of each roll, top with generously with onions, top with 3 slices of cheese. Repeats with remaining meatballs, onions, bread and cheese.

Place the rolls with the meatballs on them back in the oven on low broil. Broil until the cheese melts and is golden and bubbly.

Remove from oven, top with other half of bread and serve.

These also make a great picnic sandwich. We will be taking these to baseball games all summer.
