Has anyone had one of those weeks? You know what I mean, crazy, busy, one or two kids are sick, you’re running all over the place and you go to bed with a to-do list as long as the one that you started the day with. Actually, I haven’t had one of those weeks, I have had one of those months.

I try to make a nice hot breakfast 4 days a week, leaving Friday to the only day we have cereal. I love that I am sending the kids off to school with a full belly and food that will fuel their brain. Protein! But honestly, the last couple of weeks, there hasn’t been “cereal Friday”, we have had cereal, Monday, Tuesday, and Friday…agh! I can tell the difference in the kids, they come home saying I didn’t pack enough snacks or lunch. I needed to step it up, but I need to simplify, or my sanity – if I have any would be gone.

So this is what I came up with. A wrapped breakfast sandwich. This not only was easy, but there was NO MESS! Eggs and cheese weren’t spilling out of this sandwich, making the table spotless. Well, except for the spilled OJ. But you know what? I can’t complain. I hope this recipe offers you a dash of sanity like it did me.

PS: You can totally use your own biscuit recipe, which is what I would have done, except remember it is one of “those weeks”.

How do you make this Easy Wrapped Biscuit Breakfast Sandwich?

  • Preheat oven to 350 degrees.
  • In a medium or large saute pan, cook sausage patties until thoroughly cooked, about 4 minutes on each side. Remove from pan and set aside on a paper towel to absorb any grease. In the same pan, scramble the eggs, until cooked (we like our eggs cooked until they are fluffy but still look a little wet).
  • On a lightly floured surface roll out biscuits one at a time, to a 4 inch round circle.
  • Doing one biscuit at a time lay down a large spoonful of eggs, do this on the remaining biscuits to make sure you divide up the eggs evenly. Add a slice of cheese on top of the eggs, repeat with the rest of the biscuits.
  • Now top the cheese with the sausage patty, then start to fold up or wrap the eggs, cheese, and sausage. Fold up one side, then the opposite side, repeat with the ends. Pinch closed and turn over onto the pan, make sure the seam is on top of the pan.
  • Bake at 350 for 15-17 minutes. Until biscuit is golden, remove from oven and rub a butter stick on top. To lightly butter the biscuit, of course, this is optional.
  • Serve immediately with fresh fruit.

A breakfast sandwich that is wrapped in a biscuit. It is easy to make, easy to clean up, kid and mom approved. A sausage, egg and cheese sandwich offering a new twist on your average wrap.

Ingredients
 

  • 8 eggs whisked
  • 8 mini sausage breakfast patties or 12 ounces of breakfast sausage formed into small patties
  • 1 can Pillsbury Grands Flaky Layers Big Biscuits 8 biscuits
  • 8 slices sharp cheddar cheese
  • salt and pepper to taste

Kids review: WOW! They loved these, I was pretty sure this would be a winner since they all love sausage, eggs, and cheese. My daughter JoJo loved this because she didn’t get messy and I would have to say I loved that too!!! All 10 kids were clean and so were their spots at the table. Double win!
