Easy Chicken Cordon Bleu Stromboli
I am all about Chicken Cordon Bleu but one thing that has always bothered me about it is that most of the time there is too much chicken and not much of anything else. I rarely will order this when we go out to eat because of that. The reason I love this classic meal of Chicken Cordon Bleu is because of the combination of the chicken, gooey cheese and the saltiness of the bacon. So when I make it at home, I am sure to stuff my chicken with an obscene amount of cheese and then I use Canadian bacon instead, thick slices, no wimpy deli ham here!

Well when in a bind a few weeks ago for dinner, I came up with this idea of Chicken Cordon Bleu Stromboli and this idea stemmed from that I had some Rhodes Roll bread rising. Instead of stressing about a main dish, I decided to stuff the bread and make it the star and that is exactly what happened. I ran up to the store and grabbed a roisterer chicken, oh man this chicken is the best right?!

The end result was not only was this meal amazing and all of the kids loved it! SCORE! But it was super easy, really the hardest part was taking the kids up to the store…eek!

How do you make Easy Chicken Cordon Bleu Stromboli?

Follow the direction on the Rhodes Rolls package, let the bread rise 3-5 hours at room temperature.

Once the bread has risen, roll out the dough on a lightly floured surface until it is approximately 8×12, a little bigger makes it easier in the end.

Cut the Swiss cheese slices in half, set 4 halved slices of cheese aside, then lay down the remaining slices of the cheese on the rolled out dough.

Next place the Canadian bacon on top of the Swiss cheese slices on one side of the dough, then place the remaining 4 cheese slices on top of the Canadian bacon. Lastly top the cheese with the shredded chicken (or any type of shredded chicken you have, rotisserie just has the best flavor) on top of the cheese and Canadian bacon.

Starting on the side that has the chicken and the Canadian bacon, gently roll the dough into a log, make sure all the toppings stay inside the bread.

Cover with towel and set aside. Preheat oven to 350 degrees.

Once oven is ready uncover the bread and brush the melted butter all over the bread, including the sides and ends.

Place in oven and bake 20-25 minutes.

Remove from oven, cut into slices and serve.

Ingredients
 

  • 1 Rhodes Rolls bread loaf
  • 8 slices Swiss cheese
  • 4 slices Canadian bacon thick
  • 1 1/2 cups shredded chicken I used a rotisserie chicken
  • 2 tablespoons butter melted
  • yellow mustard optional for dipping or spread
