Friends, it is that time of year where 2015 comes to a close and we welcome 2016 with open arms. So what are your plans to celebrate the New Year? Many people have traditions, and while growing up, my family did the same thing every year. My little family has yet to find our traditional New Year’s Eve “theme”, partially because our kids have been too young up until now to stay up and ring in the New Year. But that is all about to change. Our family this year is celebrating with a poker tournament and our favorite mocktails & cocktails. And by cocktails, I don’t mean the traditional drinks; I mean shrimp cocktails.

My kids love shrimp. Cannon, our youngest, will devour as much shrimp as he can before the shrimp hits the table, so we always have guard the shellfish from his little fingers to make sure we have enough for everyone. This results in Cannon stealing shrimp off of my husband’s plate if he doesn’t inhale them quickly.

After we decided on this New Year’s idea, my hubby ran to Walmart to pick up all the fixings, which included each of our favorite shrimp options. My personal favorite is the SeaPak Jumbo Coconut Shrimp. My early bets are on Madden, our 8-year-old, a little card shark. How do you make Creamy Bacon & Shrimp Dip?

Preheat oven to 400 degrees.

Cook & crumble the bacon. Set aside 2 tablespoons and place in a separate bowl for later. Add the remaining bacon into a medium-sized bowl. Add in softened cream cheese and sour cream. Mix until well combined, I used a hand mixer. Once well-combined stir in 1/2 cup chives, set aside.

Prepare your shrimp, follow the SeaPak package directions for the shrimp that you picked. Once cooked, roughly chop up the shrimp into medium chunks, add shrimp to cream cheese mixture and stir it in along with 1 cup of cheddar and Monterey Jack cheese and mix well.

Spoon into serving pan, you could really use anything you have just make sure dip is about 1 inch deep, or you may need to adjust cooking time. Cover with foil and bake for 25 minutes. Remove foil and add remaining cheese and chives then bake for another 10 minutes or until hot and bubbly and the cheese had a golden edge around the pan.

Remove from oven and serve with crackers, chips or vegetables.

  • 16 ounce cream cheese softened
  • 1 cup sour cream
  • 1 pound bacon cooked crispy & crumbled
  • 1/2 cup + 1 tablespoon chives chopped
  • 12 ounces shrimp cooked & chopped I used SeaPak Shrimp Scampi
  • 1 cup+ 1 tablespoon finely shredded cheddar cheese
  • 1 cup+ 1 tablespoon finely shredded Monterey Jack cheese

Instructions
