I love salad! For the rest of the family, this is taking some “work.”


As the kids age, they broaden their plate with things like veggies, but this isn’t easy. My hubby is not a huge salad fan unless it is drenched in homemade Ranch dressing. He is very particular about Ranch dressing.

The gobs of bacon and cheese help since those are two things that our family loves. I love a good wedge salad with crisp iceberg lettuce. It is one of the few ways I will eat iceberg lettuce.

My only complaint about a wedge salad is that we make a mess every time – literally. The kids (or even myself) cutting up the lettuce is not a pretty sight. I would much instead serve this in a bowl and call it good, which is what gave me the idea for this Chopped Wedge Salad. I added spinach for color and nutrition, and the kids didn’t even notice.

Recipe Tips

  • Have dressings on the side and salt and pepper so people can dress and season to taste.
  • This salad serves enough for 10-16 people, depending on the age of the people eating it.

Anything with bacon is usually a win with the kids, and if I can use this Chopped Wedge Salad to get them to eat their veggies, then I am one happy camper.

Ingredients
 

  • 1 head iceberg lettuce coarsely chopped
  • 5 ounces spinach coarsely chopped
  • 11 ounces cherry tomatoes sliced in half
  • 1 small purple onion diced
  • 2 pounds bacon cooked and coarsely chopped
  • 5 ounces blue cheese crumbles
  • Balsamic Vinegar Glaze use as a drizzle
  • Optional: Your choice of dressing We prefer ranch.

Instructions
 

  • In a large serving or salad bowl layer the ingredients in this order: lettuce, tomatoes, onion, bacon and blue cheese.
  • Layer upon layer of deliciousness.
  • Bring on the bacon.
  • And cheese. Never too much cheese.
  • Toss to combine salad.
  • Serve and drizzle each salad lightly (or heavily if you are me) with balsamic vinegar glaze.
  • Have dressings available on the side, along with salt and pepper so people can dress and season to taste.
