My kids just love red sauce. Especially my youngest, Cannon. They would literally eat spaghetti every night of the week. If I alternated between spaghetti and tacos, I literally  wouldn’t have to make anything else, they would all be happy. And while I love spaghetti too! As a mom, I know my kids need a little protein to get them through their next day with enough energy to do all their activities.

That is the thought that inspired this meal, well that is, after my hubby suggested it. This has it all a traditional red sauce, with noodles, bread crumbs, chicken, and cheese, don’t forget that part! My kids love, love, love cheese, they get that from my husband. So when I served this the first time and they saw the melted cheese, there was silence. Which is a good thing in our home, it means they actually like it.

How do you make Chicken Parmesan Pasta Bake?

  • Prepare sauce, this recipe takes about an hour to make. Directions here: Spaghetti Sauce. Once you have made the sauce and it is simmering, or if you are using canned sauce, prepare the chicken and noodles. 
  • Heat olive oil in a medium sized pan over medium heat. 

  • Season chicken breast with granulated garlic, salt, and pepper to taste. Cook for 6-7 minutes on each side until chicken is cooked all the way through and juices run clear. Remove from pan and cool. Once cooled, cut into 1 inch cubes.

  • Cook pasta as directed and drain, return to pot, add 2 cups of sauce, noodles, 1/2 cup of Parmesan cheese, 1 cup mozzarella cheese, and chicken cubes. Toss to combine.

  • Heat oven to 350. Pour 3/4 cup of sauce on the bottom of a 4 inch deep baking dish. Then add the chicken & noodle mixture, top with the rest of the mozzarella cheese and Parmesan, and then top with bread crumbs. Place in oven and bake 20-25 minutes, until the breadcrumbs are golden brown.

  • Before you serve, using the leftover sauce, add about 1/4 cup to the bottom of each bowl, then put the pasta on top. One of my children, Cannon, likes the sauce on top, so you could do that too. I think that this adds to the presentation and it allows for some additional sauce.

  • Serve immediately, devour, and enjoy!

Ingredients
 

  • 1 pound large Rigatoni pasta boiled to al dente and drained
  • 3/4 cup Italian seasoned bread crumbs
  • 2 cups mozzarella cheese grated
  • 3/4 cup parmesan cheese grated
  • 2 chicken breast
  • 2 tablespoons olive oil
  • granulated garlic to taste
  • salt & pepper to taste

Spaghetti Sauce Recipe (or use 4 cups canned)

  • 29 ounces tomato sauce
  • 14.5 ounces diced tomatoes
  • 6 ounces tomato paste
  • 1/4 cup Italian seasoning add additional seasoning to taste
  • 1 white onion diced
  • 3 garlic cloves chopped
  • 2 tablespoons olive oil
  • 1/4 cup red wine
  • salt to taste

Kids review: My kids love the cheese, noodles, and the sauce… the chicken they were picking out. But after some convincing they ate it all. We even had the leftovers the next night and it was just as good.
