Friends, this dish is amazing. It is creamy, delicious and has all the fixings for the perfect comfort food meal. I was so excited to make this dish. To be honest, I initially thought I would just make Chicken Marsala; but by adding in a Savory Portobello Mushroom soup to add some creaminess, it reminded me more of a stroganoff. While making it, I was torn. It wasn’t purely a Marsala or a Stroganoff, but it combined the two flavors into this one amazingly delicious dish.

This isn’t your standard Cream of Mushroom Soup. This soup was made for creating sauces and adding a spin to classic dinners. The entire line of Campbell’s Soups for Easy Cooking are amazing and made specifically to help you make dinner easier! They’re easy to find too. At Walmart, they are located right next to the classic Campbell’s Soup cans. You can’t miss them.

This dish, along with my Mexican Quinoa Bake, which I also made from Campbell’s Soups for Easy Cooking, has me incredibly excited to continue trying Campbell’s Soups for Easy Cooking. It was nice to throw together a nice meal that tasted like I worked in the kitchen for hours when I really didn’t.

How do you make Chicken Marsala Stroganoff?

With the pasta cooked and set aside, add 2 tablespoons butter to skillet pan over medium-high heat. Once the butter starts to melts add chicken. Season chicken with salt and pepper and cook on both sides until it has a golden crispy outer crust, and cooked all the way through 7-10 minutes.

Remove chicken from pan and set aside to cook, add the noodles to the skillet pan in the chicken juices, set aside.

Make the sauce using the noodle pot. Add in 2 tablespoons butter, onion, mushrooms, and garlic. Cook until mushrooms are tender and glossy, 5 minutes.

Add in wine and let it cook 3-5 minutes until wine starts to absorb into the mushrooms.

Stir in flour and remaining 2 tablespoons of butter. Pour in Campbell’s Savory Portobello Mushroom Soup, stir until combined. Add in cheese and stir until melted.

Add in chopped chicken. Cook for 3-5 minutes, until sauce is hot.

Pour sauce over noodles and sprinkle with mozzarella cheese. Place skillet in the oven, set oven to high broil and broil the cheese until it light golden brown and bubbling.

Remove from oven and serve.

Ingredients
 

  • 1/2 pound penne pasta cooked
  • 1 pound chicken thighs approximately 3 thighs
  • 12 ounces portobello mushrooms thinly sliced
  • 1/2 small yellow onion finely diced
  • 2 garlic cloves finely minced
  • 1/4 cup dry Marsala wine or Marsala cooking wine
  • 6 tablespoons butter divided
  • 2 tablespoons flour
  • 1 cup finely grated parmesan cheese
  • 14.5 ounce carton Savory Portobello Mushroom Campbell’s for Easy Cooking
  • 1 cup mozzarella cheese finely shredded
  • salt & pepper to taste

Instructions

  • Add in wine and let it cook 3-5 minutes, until wine starts to absorb into the mushrooms. 
  • Stir in flour and remaining 2 tablespoons of butter. Pour in Campbell’s Savory Portobello Mushroom Soup, stir until combined. Add in cheese and stir until melted.
  • Add in chopped chicken. Cook for 3-5 minutes, until sauce is hot.
  • Pour sauce over noodles and sprinkle with mozzarella cheese. Place skillet in the oven, set oven to high broil and broil the cheese until it light golden brown and bubbling. Remove from oven and serve. 
  • **If you don’t have a skillet that has a handle that is oven friendly, just add the noodles to an oven safe baking dish, top with sauce and cheese like directed oven and place in oven to broil.*
