My kids and husband love barbeque sauce. Me…not as big of a fan until I made this recipe. I love the sweetness of the chicken and using dark meat made all the difference in bringing in additional flavor and kept it from not tasting dry. Easy to throw together, this is a guaranteed crowd pleaser. A wonderful dish to serve to large groups, to take to a picnic or a simple family dinner. Dress this with some whole-wheat cornbread and baked beans and you have a down-home cookin’ dinner.

How do you make Best Slow Cooker Barbeque Chicken & Healthy Cole Slaw?

Barbeque Chicken
  • Brown chicken for four minutes on each side to sear in 1 tablespoon of hot oil in a large skillet over med-high heat. Remove from heat and place in a slow cooker.

  • Combine remaining ingredients. Pour over chicken.

  • Cover and cook on high for one hour. Reduce heat to low, and cook five to six hours.
  • Remove chicken from sauce and then shred it into a large bowl, using your hands. Stir shredded chicken into the sauce. Spoon mixture onto buns, serve over a salad, or coleslaw.
Healthy Poppy Seed Cole Slaw
  • In a large bowl mix together all the ingredients and chill in the refrigerator until ready to serve.

Ingredients
 

Barbeque Chicken

  • 1 1/2 pounds boneless skinless chicken thighs (use dark meat here for most flavor!)
  • 1 tablespoon olive oil
  • 1 cup ketchup
  • 1/4 cup dark brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cider vinegar
  • 1 tablespoon yellow mustard
  • 1 teaspoon ground red pepper
  • 1/2 teaspoon garlic salt

Healthy Poppy Seed Cole Slaw

  • 8 cups red cabbage shredded
  • 2/3 cup vanilla honey Greek yogurt
  • 1/2 cups dried cranberries
  • 1/2 cup pepitas pumpkin seeds
  • 2 teaspoon poppy seeds
  • salt and white pepper to taste

My review: This is by far my favorite homemade barbeque recipe. I love the sauce. It isn’t too tangy which is something I don’t care for. I would agree that you need to use dark meat, it is WAY better. White meat tends to be too dry in most crock pot meals.

Kid’s reviews: Anything with barbeque these kids will eat, I just have to yell barbeque and they come runnin’.
