These Baked Blueberry Cake Donuts are just amazing! Topped with cream cheese and lemon zest frosting, these cake donuts make a delightful baked treat.
Who doesn’t just love donuts? Especially baked ones! They are my favorite! And right, like I have mentioned before that it’s because they’re baked! Oh, yes I said it… baked. I can have 4, instead of one, right? And because they are made with blueberries they are even healthier!?! This recipe is so approved for my New Year’s resolution.
So blueberries are on sale here in Colorado, yahoo! Of course we stocked up. My husband asked me what I was doing with them and I gave him a few ideas. Then he said, “Would you mind making blueberry donuts?” What??? Come again, did he just ask me for donuts? My husband who swears to hate dessert and cringes when I bring home donuts… even though he does like chocolate glazed ones, I have seen him sneak them.
Anyway, the request was fulfilled. Too bad by the time he got home from work there was only a half left. He has now requested a crumb topping, so I am sure that will be up on the blog soon.

How do you make Baked Blueberry Cake Donuts?
Preheat oven to 350 degrees. Grease 2 donut pans using cooking spray. Recipe makes 12 donuts.
Melt butter in a small bowl and set aside to cool.
In a medium mixing bowl add together flour, brown sugar, white sugar, baking powder, salt, and nutmeg. Set aside.
In a small mixing bowl whisk milk, vanilla extract, and egg until well combined.
Mix together the wet and dry ingredients until just combined, make sure you don’t over-mix, you want a fluffy donut, not a dense one! Gently fold in blueberries.
Take a piping bag or a Ziplock bag with a corner cut off and add batter carefully. Pipe the dough evenly into the prepared pans, about 2/3 full.
Bake for 11-13 minutes, remove from oven and cool for 1 minute before you turn them over onto a cooling rack. Let the donuts cool on rack and make the frosting.
In a small bowl, beat together the butter and cream cheese with an electric mixer or hand beater. With the mixer on low speed, add the powdered sugar until smooth and creamy. Stir in lemon juice.
Once frosting is done and donuts are cool, dip the tops of the donuts into the frosting and turn over, back onto the cooling rack. Garnish with lemon zest if desired. Serve right away, enjoy!

- 2 tablespoons unsalted butter softened
- 2 ounces cream cheese softened
- 1 cup powdered sugar
- 1 teaspoon lemon juice
- 1/2 - 1 teaspoon milk
- 1 tablespoon lemon zest for garnish optional (about 1 lemon)
