I love cake donuts!
And these Baked Blueberry Cake Donuts are just amazing! Topped with a cream cheese, lemon zest frosting these cake donuts are just delightful.
Who doesn’t just love donuts? Especially baked ones! They are my favorite! And right, like I have mentioned before that because their baked! Oh, yes I said it…baked. I can have 4, instead of one, right? And because they are made with blueberries they are even healthier!?! So this recipe is approved for my New Year’s resolution.
So blueberries are on sale here in Colorado, yahoo. And so we stocked up. My husband asked me what I was doing with them and I gave him a few ideas. Then he said, “Would you mind making blueberry donuts?” What? Come again, did he just ask me for donuts? My husband who swears to hate dessert and cringes when I bring home donuts…even though he does like chocolate glazed ones, I have seen him sneak them. Anyway, the request was fulfilled. Too bad by the time he got home from work I think there was only a half left. He has now requested a crumb topping, so I am sure that will be up on the blog soon.

Baked Blueberry Cake Donuts are just amazing! Topped with a cream cheese, lemon zest frosting these cake donuts are just delightful.
- 1 ½ cups flour
- ¼ cup brown sugar
- ½ cup white granulated sugar
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 1/8 teaspoon nutmeg
- 3 tablespoon butter, melted
- ½ cup milk
- ½ teaspoon vanilla extract
- 1 egg
- ¾ cup fresh blueberries
- Cream Cheese Frosting
- 2 tablespoons unsalted butter, softened
- 2 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon lemon juice
- ½ - 1 teaspoon milk
- Garnish – lemon zest, 1 lemon, zested
Preheat oven to 350 degrees. Grease 2 donut pans using cooking spray. Recipe makes 12 donuts.
Melt butter in a small bowl and set aside to cool.
In a medium mixing bowl add together flours, brown sugar, white sugar, baking powder and nutmeg. Set aside.
In a small mixing bowl whisk milk, vanilla extract and egg until well combined.
Mix together the wet with the dry ingredients until combined, make sure you don’t over mix, you want a fluffy donut not a dense one! Gently fold in blueberries.
If you don’t have a piping bag, cut the corner of a Ziplock bag, add batter and pipe the dough evenly into the prepared pans, about 2/3 full.
Bake for 11-13 minutes, remove from oven and cool for 1 minute before you turn them over on to a cooling rack. Let the donuts cool on rack and make the glaze.
Cream Cheese Frosting
In a small bowl, beat together the butter and cream cheese with an electric mixer or hand beater. With the mixer on low speed, add the powdered sugar until smooth and creamy. Stir in lemon juice.
Once frosting is done and donuts are cool, dip the tops of the donuts into the frosting and turn over, back onto the cooling rack. Frosting side up and garnish with lemon zest if desired. Serve right away….yum!
Note: Frosting will not harden, it will stay soft. Do not stack them to store.
