I love making simple salads that are wholesome for my kids. Whether it is for a light lunch or a side to a protein for dinner, I always find simple salads can be a real winner. And if my kids are getting their fruits or veggies without anyone shedding tears, well then it is a huge win for this mom.

My kids love apples! Madden loves Granny Smith, Jersey loves Red Delicious and the rest of the kids are just like me they for the mother of all apples and the most pricey apple Honeycrisp.

After making my Mango Berry Salad, I knew that the orange glaze that I put on that salad would go just perfect with some apples. So that is what inspired this salad.

The only thing with this salad is that you can’t prepare it too much in advance, because will start to brown and soften after a bit, but don’t worry that takes some time. But this salad is best served when prepared. So if taking this to a dinner or potluck, then just make right before you leave. The perk about this salad – it takes very little time, literally less than 20 minutes, took me about 10 using my apple slicer.

I can guarantee that this Apple Walnut Salad will be a weekly salad made in our house this summer. Perfect to take to the pool as a refreshing snack. So while I am still praying for some rain for our dry (well drier than normal) Colorado landscape, I am looking forward to the warm weather, days at the park and grill out with family and friends. How do you make Apple Walnut Salad?

  • Core apples and chop into chunks.
  • in a small mason jar add honey, zest and orange juice. Screw on the lid tightly and shake vigorously until combined.

  • Add apple chunks and walnuts into a large mixing bowl. Pour over glaze and toss to combine.
  • Serve immediately or cover and place in the refrigerator for 20-minutes, then serve.

How do you store this Apple Walnut Salad?

Store in an airtight container in the refrigerator, to prevent the apples from browning.
This salad if best when eaten fresh.

Ingredients
 

  • 2 large Granny Smith apples
  • 2 large Pink Lady apples
  • 2 large Honeycrisp apples
  • 2 large Golden Delicious apples
  • 1/2 cup chopped walnuts

Citrus Glaze

  • 6 tablespoons honey
  • 3 teaspoons orange zest - I used a Tangelo
  • 1 1/2 tablespoons orange juice

Instructions
 

  • Core apples and chop into chunks.

    Are they correct?!

    1. It looks like the serving size wasn’t put in so that number was for the entire batch! This usually feeds 8-10, so I changed it to reflect that. Enjoy!
