This warm and cozy Tuscan Soup is loaded with sausage, kale, and potatoes, in a creamy broth. Top it with grated Parmesan cheese and crispy bacon for the best bowl of soup ever.

Everyone has their variation of Olive Garden’s Zuppa Toscana, and this is our family’s take. We love it so much it’s one of our go-to dinners whenever we’re craving a hearty bowl of soup.

It’s a meal, but adding some focaccia breadsticks for dunking is a side dish I highly recommend. Just like the restaurant, except at home!

Recipe Notes

This is a quick 30-minute soup recipe, which makes me a happy mom. It’s easier and faster than herding the family into the car to go out for dinner!

We love it with extra spice, so I use spicy Italian sausage, and I add some red pepper flakes for even more heat. If you prefer mild sides, use regular Italian sausage and skip the red pepper. It will still be delicious.

Not everyone is a kale fan, but this soup is delicious. It cooks down, so it’s tender and delicious!

Don’t forget the cheese – a generous amount of Parmesan cheese simmers in the soup, giving the broth some body, and we sprinkle a lot over the top for serving. It’s not to be missed.

The bacon garnish is optional, but we love it. It adds a nice crispy texture, but the soup is still amazing without it.

Ingredients

  • Chopped red onion
  • Chopped yellow onion
  • Olive oil
  • Minced garlic cloves
  • Chicken broth
  • Peeled and diced red potatoes
  • Roughly chopped kale
  • Hot Italian sausage
  • Heavy whipping cream
  • Grated Parmesan cheese or Asiago cheese
  • Salt and white pepper

How do you make Creamy Tuscan Soup?

In large heavy bottomed pan heat olive oil, add sausage, onions, and garlic and cook until sausage is completely cooked and onions are tender.

Add broth and potatoes and simmer for 15 minutes over medium heat.

Add kale, heavy whipping cream, Parmesan and season with salt and pepper. Then simmer for another 5 minutes.

CUTTING BOARD: This is a kitchen must-have and counter saver for me. While we have countertops, you can cut on, and this extra step will preserve my counter. I also find that using a cutting board makes for less cleanup afterward. I love this cutting board because it has a groove around the board to prevent juices from running all of the counters.

SAUCEPAN: I am a total snob after having an assortment of pots in our cupboard over the years. I won’t try anything else after getting some Calphalon pots on sale at my local grocer. They are affordable and durable – a win-win in our home.

    Really good and simple! I didn’t have enough potatoes so i added a can of cannellini beans and used arugula instead of kale, because that is what i had on hand. I added some crushed red pepper too because all i had on hand was sweet Italian sausage. I will Definitely make this again!
